Appearing as early as the Neolithic period, butter is made by churning creamed milk (22 liters of milk per 1 kg of butter). When sold in France, it must contain at least 82% fat (compared to 80% in the United States). Ghee, a sacred and cherished food in India, is clarified butter from which lactose, water, and protein are removed.
